Of all the Piquillo Pepper from Lodosa that takes place in Navarre, only the cultivated by the farmers enrolled in the situated parcels in the eight localities that contemplates the Regulation of the Regulating Council can solely be welcomed in the Denomination of Origin.
The Piquillo Pepper of Lodosa characterizes itself being a fruit of
small size, forms flat triangular and of fine, delicate and flavourful meat.
Its prestige and differentiation must not only to these characteristics, but also to the process of transformation that suffers before tinning it for its sale.
The objective of this Denomination is to maintain a system traditional of elaboration of the product WITHOUT THE PEPPERS ARE
WASHED FOR the PEELED OF THE FRUIT.
The peppers are packaged without liquid, the little liquid one that contains the tin, is the own juice of the peppers, dense and dark.
Already in the factory, the peppers will follow a series of well-taken care of steps to the maximum for their conserve transformation.
